Billsboro Winery, located on 60 scenic acres overlooking Seneca Lake, is a Finger Lakes winery known for its deep-rooted commitment to sustainability. Owned by Kim and Vinny Aliperti since 2007, the couple has implemented eco-conscious practices such as solar-powered operations, composting, lightweight bottles, and native pollinator plantings. Vinny also co-founded the FLX Craft Beverage Environmental Coalition, a regional initiative uniting wineries, breweries, and other producers to tackle environmental threats—like landfill expansions and water pollution—and improve materials management, including creating a wine bottle recycling program to keep glass out of landfills.
